Our Story
One-Eyed Jacks story begins back in the 1980s when co-founder Scott Shulock was cooking Bar-B-Q at a little joint in Orlando, Fl. After returning to his hometown of Lockport in the early '90s, he missed the great Bar-B-Q he helped produce down south. He then decided, along with co-founder Christine Yotter to open One-Eyed Jacks Smokehouse Grill on May 5, 1998.
The start was very modest, a small place on the corner of Rt.31 and Sandpit Rd. had only a few tables and a small counter. After the first couple of years, things began to take off and they ran out of room. The decision was made to move to larger digs, and they moved to their current location at 5983 S. Transit Rd. in the spring of 2000.
As the years went by, the business continued to grow, and in 2002, they began catering and vending at different events around the WNY area. After nearly 20 successful years, Chris decided to retire at the end of 2016, and Scott formed a new partnership with Paula Smallman and Katrina Boyce, who had been employed by One-Eyed Jacks for several years. Together, the three partners have several decades of experience in the restaurant business and will continue to carry on the One-Eyed Jacks legacy.
